I've made this so many times and I can promise you it is a great one pan dish that works brilliantly, it is a high protein meal which is incredibly important during mid-life years as we need to make sure we are getting adequate protein for so many vital functions within the body. It's also a very easy recipe that goes down well with the family.
Serves 4
500g pork mince
2-3 cm grated ginger root
3 grated garlic cloves
100g bread crumbs
small bunch of coriander
3 spring onions chopped
zest and juice of one lime
1 red chilli chopped
400g coconut milk
1 chicken stock pot dissolved in 200ml water
3 tbsp soy sauce
200g vegetables; try a combination of green beans, edamame beans, peas, pak choy, spinach, mange tout
sesame seeds, cashew nuts or peanuts to garnish
matchsticks of cucumber
Pre-heat oven to 180degC
In a food processor mix the ginger, garlic, spring onions, coriander and chilli until fine.
Add to the pork mince, meatballs and lime zest with salt and pepper and form into golf ball sized spheres.
In a roasting dish, mix together the coconut milk, soy sauce and stock. Add the meatballs.
Cook for 15 minutes and then add the vegetables and cook for a further 10 minutes.
Garnish with the sesame seeds and nuts of your choice, fresh coriander and cucumber. Serve with brown rice, noodles or cauliflower rice.
